~ Cheesy Cheddars Jalapeño Poppers ~

4 ounces cream cheese, room temperature
1 cup jack cheese, grated
1 cup cheddar cheese, grated
¾ cup jalapenos, chopped
1 bag Milton’s Organic Cheesy Cheddars, crushed
2 eggs, beaten
1 cup flour
Avocado oil, or other high-heat safe frying oil


Mix the cream cheese, jack cheese, cheddar cheese and jalapenos together. Use a spoon to scoop out the cheese mixture and form into a shape that resembles a jalapeno, about 2-3 inches in diameter. Line on a baking sheet or plate and chill in the refrigerator for about 30 minutes. Put crackers, flour and eggs in separate bowls. Remove the jalapeno poppers from the refrigerator and coat in egg, then flour, back to egg, then cracker crumbs. Repeat with remaining jalapeno poppers and heat oil to 350 degrees Fahrenheit. Fry jalapeno poppers for about three minutes, turning once or twice. Serve garnished with green onions or any herbs you have on hand. Enjoy!
