Strawberry Pineapple Chicken Salad


2 cups grilled or rotisserie chicken, chopped into small pieces

1⁄2 cup canned crushed pineapple, thoroughly drained

1⁄2 cup fresh strawberries, thinly sliced

1⁄3 cup slivered almonds

1⁄2 cup thinly sliced celery

2 tablespoons finely diced red onion

1⁄4 cup fresh basil, julienned

1⁄4 cup mayonnaise

1 Tbsp honey

1 tsp Dijon mustard

1 tsp freshly squeezed lemon juice

Salt and pepper

1 box Milton’s Organic Gourmet Himalayan Salt Crackers


In a large bowl, combine the chicken, pineapple, strawberries, almonds, celery, onion and basil. Mix gently. In a separate bowl, whisk together the mayonnaise, honey, mustard, lemon juice and season to taste with salt and pepper. Pour the dressing over the chicken mixture and fold together. Pop in the refrigerator and allow the flavors to infuse. Serve cold with Milton’s Organic Gourmet Himalayan Salt Crackers. Yum!
