Gluten Free No-bake Chocolate Chip Peanut Butter Balls

Servings: approx. 40 balls


Ingredients:

1 cup certified gluten free rolled oats

1 ½ cup Milton’s Gluten Free Crispy Sea Salt Crackers, finely crushed

1 ½ cups unsweetened coconut flakes

1 cup chia seeds

½ tsp salt

1 ¼ cups smooth peanut butter

½ cup honey

1 tsp pure vanilla extract

¼ cup miniature chocolate chips


Instructions:

In a large bowl, combine oats, crushed crackers, coconut flakes, chia seeds and salt. In a separate bowl, combine the peanut butter, honey and vanilla extract. Microwave the peanut butter and honey mixture for 30 seconds, then add the two mixtures together and stir well. Allow the mixture to cool for at least 10 minutes, and then add the miniature chocolate chips. Mix until the chips are evenly distributed throughout.


Scoop the mixture (heaping Tbsp) onto your hand. Roll each portion tightly into a ball between your palms. Place the baking sheet with protein balls in the refrigerator to chill until firm. Serve chilled and enjoy!
