Gluten Free Mediterranean Quinoa Salad


3 cups cooked quinoa

1 cup cooked chickpeas

½ cucumber, diced

1 cup cherry tomatoes, cut in half

1 orange bell pepper, diced

¼ red onion, minced small

½ cup crumbled feta cheese

¼ cup sliced kalamata olives

2 Tbsp toasted pine nuts

2 Tbsp chopped parsley or basil

1 tsp salt

½ tsp black pepper

  1. Mix all ingredients together in a bowl and toss with a Balsamic Vinaigrette. Serve with your favorite Milton’s Gluten Free Crackers.
