Meal Prep Meatballs

Ingredients for meatballs:

2 lbs ground turkey (preferably with a higher percentage of fat)

½ bunch scallions, chopped

½ bunch parsley, chopped

2 medium whole eggs, lightly beaten

½ onion, minced well

3 cloves garlic, minced

2 bags Milton’s Gluten Free Multi-Grain Crackers crushed in the bag or food processor

2 Tbsp salt

1 Tbsp black pepper

2 Tbsp olive oil


Ingredients for dipping sauce:

1 can cranberry sauce

1 ½ tsp honey

4 Tbsp dijon mustard

2 Tbsp pickle juice

¼ tsp cayenne

1 Tbsp salt


Instructions:

In a large bowl, combine all of your meatball ingredients except for the crackers and mix well. Add your crushed crackers ½ cup a time until dry enough to form balls. With a small ice cream scoop or spoon, form balls that are about 2 inches wide, then set on a flat surface.


In a large skillet, add olive oil and turn the heat to medium low. When your oil is hot add enough meatballs in but do not overcrowd them. Turn to evenly brown. Keep a lid on between turns. Cook for eight minutes, then let rest a few minutes to cool. If you’d prefer to bake them, preheat your oven to 375 degrees Fahrenheit. 


Place the meatballs on a baking sheet lined with foil for easier clean up. Bake for 15-20 minutes or until the internal temperature is 165 degrees. Let cool a few minutes before serving.


In a medium bowl combine all of your sauce ingredients and combine well. Feel free to add more mustard or cayenne for more heat!
