6 eggs, hard boiled
¼ cup red onion, finely diced (or yellow or white onion) 1/4 cup mayonnaise
1 Tbsp Dijon mustard (or yellow mustard)
2 tsp fresh parsley, finely diced (or dried parsley)
2 tsp chives, finely diced (or green onions)
1 large dill pickle, diced (or sweet pickle)
1 tsp fresh lemon juice (or bottled lemon or lime juice) salt and pepper, to taste.
Cut the hard-boiled eggs into a small dice and place in a medium bowl. Add all the remaining ingredients and mix together gently. Season with salt and pepper. Serve with Milton’s Gluten Free Everything Crackers!
