Crab Salad

¼ cup plain Greek yogurt
2 Tbsp fresh lemon juice
½ tsp lemon zest
2 Tbsp extra-virgin olive oil
Hot sauce (choose your favorite!)
Salt and freshly ground pepper
½ pound fresh Dungeness crab meat
1 tsp apple cider vinegar
1 cucumber—peeled and sliced into thin half moons
1 pink grapefruit, cut into segments
Milton’s Gluten Free Crispy Sea Salt Crackers

In a large bowl, mix yogurt with lemon juice, lime zest, oil and a few dashes of hot sauce. Season with salt and pepper. Place the crab in a bowl and fold in three tablespoons of yogurt dressing. Stir the vinegar into the remaining yogurt dressing then fold in the cucumber and grapefruit. Spoon the salad onto plates, top with the crab, garnish with cilantro and serve with Milton’s Gluten Free Crispy Sea Salt Crackers.
