Avocado Fiesta Time

Ingredients:⠀⠀⠀⠀⠀⠀⠀⠀⠀

4 ripe avocados⠀⠀⠀⠀⠀⠀⠀⠀⠀
Juice of 1 lime⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 Tbsp coconut oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
⅓ cup shallot, minced⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 lb. ground turkey⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 packet taco seasoning⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
Freshly ground black pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
⅔ cup shredded Mexican cheese⠀⠀⠀⠀⠀⠀⠀⠀⠀
½ cup cilantro, chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
Handful of cherry tomatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀
Queso fresco, for topping⠀⠀⠀⠀⠀⠀⠀⠀⠀

Instructions:⠀⠀⠀⠀⠀⠀⠀⠀⠀
Halve and pit avocados. Create a slightly larger well by scraping out some avocado flesh or fruit (and save it for later). Squeeze lime juice over all avocados to prevent browning.⠀

⠀⠀⠀⠀⠀⠀⠀⠀
Heat the oil in a skillet over medium heat. Add shallot and cook until tender, about three minutes. Add ground turkey and taco seasoning and break up the meat with a wooden spoon. Season with salt and pepper, and sauté until the turkey is fully cooked, about six to eight minutes.⠀⠀⠀⠀

Fill each avocado half with turkey, then top with reserved avocado, queso fresco, cilantro, tomato, and a dollop of sour cream. Serve with Milton’s Gluten Free Fire Roasted Vegetable Crackers!⠀⠀⠀⠀⠀
